Sweet Birch | Betula lenta
The most striking feature of sweet birch is its young twigs, which taste like wintergreen! This makes it both deer-resistant and a great ingredient in tea. Sweet birch was traditionally used for making birch beer and furniture. It has the greatest resistance to Bronze Birch Borer of all the cultivated birches. Wonderful fall foliage. Can be tapped like maples for syrup, and the fermented sap makes birch beer. Prefers moist, well-drained, acidic soil.
